NICOLE Hoffman has not allowed the GFC to push her off track.

“I feel we have the whole package,” the owner of two Cafe Envy outlets at Cotton Tree and Mooloolaba said. “We look after the locals and create an experience. We make sure the ambience is right, the cooking is great, the produce is consistent and fresh and I pride myself on looking after my team.

“They then look after my business and my customers.”

Despite her determination, the GFC has caused a few chinks in the armour.

“Produce is a lot more expensive, so I have noticed it in my pricing.

“I did have to increase my prices, and that was nerve-wracking. But I didn’t want to drop quality.

“I know restaurants have suffered more than cafes, but people still have to treat themselves and enjoy life and that’s where I come in.”

Cafe review: Healthy dose of envy

"GLUTTONY?" asked the waitress, as she put a tall glass of party-pink fruit juice in front of me. She's certainly got me worked out, I thought, as I sipped my mixture of watermelon, rockmelon, strawberry, apple and mint.

She'd have been just as correct had I chosen the strawberry/guava/pineapple/apple mixture called Sloth, because it's very easy to commit all seven of the Deadly Sins in Cotton Tree, especially at Envy Café, where you can feel very smug about the sheer healthiness of it all. And while you can commit any of the Seven Deadlies for a mere $6.50, the food is fresh and healthy enough to make you feel good about everything you eat there.

We began with corn fritters with bacon or mushrooms ($17.90). The mushrooms were soft and juicy, with a taste that made you think of fresh fields and pastures new, but the fritters were a little dry and there wasn't quite enough house chutney, sour cream or avocado to moisten them. Friend-of-the-day chose eggs Benedict on a generous stack of potato rosti.

The house hollandaise was really tangy. No wonder it's become the café's signature dish. It costs $17 with bacon and $17.90 with salmon. The fact there's no tough toasted muffin underneath, but soft potato rosti, flips it towards perfection. Certainly it will be my choice next time.

There's a generous breakfast burger at $14.90 with everything except a beef patty, and you can have it all day long (both the breakfast and lunch menus go all day). Bircher muesli is soaked in fresh apple juice and served with linseeds, grated apple and Greek yoghurt topped with fresh fruit ($9); the fresh fruit stack would be ideal for two or three people to share as a starter, if such a thing is allowed at breakfast, as it comes with yoghurt, almonds and praline ($14.90); and the big brekkie consists of free-range eggs your way with a choice of four sides ($18.90).

Moving to the lunch page, we noticed posh sandwiches on a choice of five breads, including gluten-free, at $12.90, and a delicious vegetarian stacked salad with four ingredients, including cinnamon-roasted pumpkin, topped with grilled haloumi and pepitas ($18). There are burgers, both vegetarian and meaty ($18.90), open grills on Turkish toast; and a daily gluten-free quiche ($14.90) and home-made soup with toasted buttered sourdough ($11.90).

So although there's everything to lift the vegetarian's (even vegan's) spirits, there's no prissiness about meat eaters, and such people can enjoy their steak sandwiches with relish. And the coffee is worth a trip on its own.

It's cheerful and laid-back, and it's not just the locals who love it, so if you're up Maroochydore way (or near the sister branch at Mooloolaba), give it a try. Envy is just the kind of café that every beach township needs.

While Envy owners Nicole and Chad Hoffman are achieving everything they hoped to and more, other chains can’t help but feel that they are lacking something. While they may feed your body, Envy serves food that will feed your soul!
“The word ‘envy’ was in my dream, written in green writing. This had to be a sign!” Nicole explains. Her dreams turning into reality, they have created two trendy green spaces on the Sunny Coast where anyone can eat, drink, relax and chat.


Soul Food

“My husband and I enjoy healthy eating and noticed society beginning to follow this trend. We are also conscious of people with allergies and wanted them to be able to enjoy this dining experience as well.” Mouth-watering dishes such as free range roasted chicken sandwich with pesto, soy mayo, cheddar cheese, mushroom, avocado and lettuce and homemade vegetable and chickpea pattie with satay dressing served on a rye, Turkish or gluten free bun are just a sample of some of the healthy choices they offer.
Even in the coldest summer Queensland has seen with days reaching 30 degrees Celsius, the line-up for freshly squeezed juices and smoothies was out the door as the health conscious beach bums sipped on fig and maple melts and summertime slushes with nothing but fruit and honey to sweeten.

Relax after a stressful day with a cup of liquid silk coffee and enjoy a slice of gluten free raspberry chocolate mud cake. Baked on site with variations for whatever your diet requires (such as low carb) Envy provides simple, guilt-free delight.

Bravo Envy, bravo

LET me just start by saying: OMG. Finally, a restaurant that gets it.
From the relaxed atmosphere, to the all day breakfast menu, amazing gluten free options and beautiful artwork which abounds; Envy Cafe epitomises the Sunshine Coast.
I would love to say this is the Coast’s best kept secret, but it’s quite the opposite. Weekday or weekend, Envy is alive with people enjoying its delicious dishes and vibrant atmosphere. And I can see why.
For those few Coast residents who may not have dabbled in the Envy flavour, I’ll try to capture to magic of this hip and healthy foodie paradise.
I’ll start with the atmosphere. I like a restaurant to have personality; a bit of music in the background, the sounds of milk steaming and to be surrounded by happy staff. I want the mood to be light and the conversation flowing.
Envy Cafe, in both of its Coast locations has achieved all these elements with class and charisma. And with beautiful art covering the walls, there is much to look at while you sit, eat and socialise.
Envy’s second success is its complete all-day breakfast menu. From dawn until almost dusk, you can enjoy all of your breakfast favourites plus a few Envy exclusives. I couldn’t go past the corn fritters with mushroom, rocket and homemade relish. What a delight.
Envy’s deal clincher - for me and all my food allergy friends - is its extensive and delicious gluten free (GF) options. I was pleasantly surprised to find many menu items were naturally free of gluten and the others had a GF option available. And if that wasn’t enough, the counter is overflowing with gluten free muffins and cakes.
Bravo Envy, bravo.
